Organoleptic characteristics
Intense, elegant and highly concentrated wine. The colour is an intense garnet. The nose explodes into enveloping balsamic and ethereal sensations where rhubarb prevails at first and then with ageing turns to spices such as cinnamon and green pepper and evolving notes of white truffle and vanilla. The taste is sumptuous, rightly austere, with great final persistence and silky tannins.
Alcohol: 14% to 15% depending on the vintage


Pairings
It goes well with large meat dishes, savoury and spicy dishes, mature cheeses and is an ideal accompaniment to game dishes.

It all started during my childhood, when I would go to his farm and he would tell me about his day, playing with my childish imagination, enchanting me with his extravagant stories. Even in the vineyard, he wore a white shirt, which set him apart from everyone else.

 

Simplicity and lightness in harmony with the surrounding nature.

 

Time has passed, I find myself here, in what was his. I dedicate this creation to him, Tita. Intense, elegant, austere as he was who inspired me to create it, noble in soul, it fully encapsulates the essence of ancient knowledge.

Vinification method
Vinification is carried out in stainless steel tanks, using the 'emerged cap' system, and maceration of the marc lasts 20 days. The fermentation temperature is controlled and maintained at around 31° C. Malolactic fermentation takes place during refinement in wood.


Ageing
Ageing lasts at least 28 months, of which at least 22 months in small Slavonian oak casks and 6 months in the bottle, for adequate evolution of the product before release on the market.
