Organoleptic characteristics
Brilliant straw yellow in colour, (the nose reveals considerable aromatic complexity, with) hints of pineapple, citrus and acacia honey. The mouthfeel is very savoury and round, with a long and mineral finish.


Alcohol
From 12.5% to 14%.


Pairings
Ideal with fish dishes, even elaborate ones. Serve at 10°-12° C


Longevity
Can have a remarkable and positive evolution for 7-10 years

From our passion, from our sunny vineyards come our best wines.
Ours is a land of structured red wines and this is where the idea and intuition of fermenting our Chardonnay Colibrì in small French oak barrels came from.
If the year allows it, the harvest is carried out late so that the ripe and golden grapes with a higher concentration of sugars arrive in the cellar.
It is filtered only once at bottling.
The whole process from the beginning is conducted in barriques.
Accompaniments: baked fish dishes, roasted white meats, mature cheeses.

Method of vinification
The fermentation is carried out in (new) French oak barriques (from the Allier area, once the alcoholic fermentation is complete), also in wood, the malolactic fermentation takes place.


Ageing
Once fermentation is complete, the wine is decanted and returned to the wood on its fine lees. Here it undergoes periodic bâtonnage to improve its structure and aromatic complexity. The whole process lasts at least 14 months.
